Intensive technologies have accelerated the baking process, pushing away classic-traditional technology. Because of the quick baking process the bread has lost both its flavor and its quality. And the yeast played a main role in this.

Yeast, according to the baking technology, plays a crucial role in the taste of bread and it is the cause of many diseases such as: cancerous diseases, diabetes, metabolic disorders, many gastrointestinal diseases, vascular diseases and so on.

 

The researchers think that when yeast is not dissolved at a high temperature, it has the ability to damage a gastrointestinal tract, beginning with an unpleasant process, the level of harmful bacteria increases, while the level of useful bacteria decreases.   • If there are two same sized bread, choose the heavier one, because yeast helps dough to make bread fluffy and large and it doesn’t weigh much,

 

  • Pressurized bread should return to its original form.

 

  • The bread should not have large pores – this indicates that bread has yeast and it’s unhealthy. The healthiest bread is the one, that has small, equal sized pores.
